Swoonworthy Recipes – Chicken and Rice Bake
In keeping with the idea of quick and simple recipes, I present to the Swoon Reads and NaNoWriMo communities: The Chicken and Rice Bake. It’s an incredibly simple recipe with little preparation that you can dress up or down. I bet you even have the essential ingredients in your pantry right now.
You will need:
1 can of Cream of Mushroom soup
1 ½ cup of water
¾ cup of uncooked rice
1 tsp. of paprika
1 tsp. of pepper
4 skinless, boneless chicken breasts cut in half
Preheat oven to 375 degrees.
In a 2 quart shallow baking dish, mix your soup, water, rice, paprika, and pepper.
Place chicken on rice mixture.
(You may notice that my chicken is cut into small pieces. The chicken breasts I bought were very big so I cut them up to make sure they cooked all the way through. It’s totally up to you how you want your chicken.)
Place cover on dish and cook for 45 minutes (or for a few minutes longer if the chicken isn’t completely done). Use a knife to test the chicken if you’re not sure.
In the interest of full disclosure, I didn’t have any paprika when I made this recipe. It’s more for taste than a requirement. Instead, I added fresh chopped garlic. Play around with the seasonings according to your taste. You can even dress it up with frozen vegetables. Just add them to the dish before placing it in the oven. That’s what’s so great about cooking. You don’t have to stick to the recipe.
